Curried Red Lentil Soup with lemon 12/14/2010
![]() I saw this recipe in Vegetarian Times Magazine and new this was going to hit the spot for tonights supper here on a COLD New England evening ! 2 cups of lentils that have been soaked & rinsed 1 qt of vegetable broth 1 lge white onion chopped 4 lge celery stalk chopped about 1 1/2 cup 2 lge carrots chopped about 1 1/2 cup 1/4 cup cilantro or parsley 1 tsp curry 1 tsp cumin 2 tbsp lemon juice Bring lentils and veggie broth to a boil add 4 cups water skim away foam Reduce heat and simmer covered for 5 min - stir occasionally Add onion ,celery, carrots, and garlic simmer 20 min Add cilantro/or parsley,cumin,curry and cook 20 more minutes Add lemon juice if desired Add Comment |
