Pineapple Cucumber Gazpacho Pineapple cucumber gazpacho.. A great way to hydrate during these Hot Sizzling Summer Days This is so refreshing! I must confide that when I make this I sometimes eat it throughout the day all by myself..It's that yummy.. In the picture I made some flax veggie crackers to go with it..These are so easy and last during the week,,Great for those that are craving some salty crunch Here is the recipe!! 4 c chopped peeled english cucumber 4 cups pineapple 1 small Jalapeno Pepper seeded and diced 1 Scallion about 1 inch of green and white part 1 Lime juiced Sea Salt as needed Chopped parsley or Cilantro to top Using food processor blend 2 cups of the cucumber and the pineapple with all other ingredients then add the final two cups and pulse..Chill for a few hours let the flavors blend. If you don't like the hot Jalapeno just don't add..For me the hot and sweetness are so delicious.. FLAX Crackers 2 cups of whole flax seed, mix with 2 cups of water soak for at least 4 hours or overnight Then In processor mix 1 head of romaine lettuce, 1 orange pepper 1 onion 2-3 fresh garlic 1 chopped tomato Add anything else you would like and then mix with flax mixture and spread on a lined dehydrator sheet and put into the dehydrator for 12 hours flip over half way through.Dehydrate at 115 degrees.
